Crunchy Asian Salad


Countdown to Easter: 2 Days!

This is a great springtime salad to contribute to an Easter banquet



  • 1 large head of Napa cabbage
  • 1/2 head of cabbage
  • 1 package pre-chopped purple cabbage
  • 1 package pre-chopped carrots
  • 5 green onions, sliced
  • 1/2 c. toasted sliced almonds
  • Optional: 1 Tbsp. sesame seeds
  • Soy Ginger dressing (Trader Joe’s) or other low-fat/low-sugar asian style dressing

Toss salad to spread dressing out thinly & evenly

Enjoy this crunchy salad & share with friends & family


You could also add chicken for some protein & make it a Chinese Chicken Salad

Quick tip: Adding brown rice to your salad makes it more hearty, nutty & flavorful!



  • Spring mix lettuce
  • Shredded carrots
  • Sprouts or micro greens
  • Short grain brown rice (the short grain has a nuttier flavor & texture than long grain)
  • Lower sodium soy sauce
  • All natural guacamole (use less than 1/4 c. in one salad) or diced avocado
  • Feta cheese (no more that 1/8 c.)
  • Tahini dressing or a vinegar-based dressing of your choosing


Spring Mix for the Best Salad recipe

Quick tip:  Mix together the lettuce, carrots & micro greens with the dressing first.

Then top with the brown rice with soy sauce, guacamole & feta cheese.  This way, you are not adding dressing where it’s not necessary and will ultimately use less dressing.

Enjoy your dark, leafy greens in the most delicious way!
