Festive Fall: Pure Pumpkin Pancakes

Become a festive fall fanatic partake in pumpkin the healthy way

There seems to be pumpkin-flavored everything at the grocery stores this time of year, but none are healthy options.  These pre-packaged pumpkin breads, batters, oatmeals, & granolas are filled with sugar, fat & white flour.  Get into the fall spirit by making these nutritious Pure Pumpkin Pancakes to satisfy that autumn pumpkin craving.

Ingredients:  3 servings (about 6 small/medium pancakes)

  • 1 c. 100% Whole Wheat flour (if it’s not 100% whole wheat, it is still contains white flour)
  • 1 1/2 tbsp. baking powder
  • 1 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 6 packets Truvia (natural no-calorie sweetener)
  • Pinch of salt
  • 2 eggs
  • 3/4 c. low fat buttermilk (buttermilk actually contains less fat than normal milk)
  • 2 tbsp. canola oil
  • 1 c. canned pumpkin puree (not pumpkin pie filling with added sugar)
  • 1/2 c. oatmeal

Optional Ingredients/Additions:

  • 1/4 c. chopped pecans (inside batter)
  • 1/4 c. dark chocolate chips (inside batter)
  • 1/4 c. light cream cheese (inside batter), keep in small chunks so there’s pockets of cream cheese inside the pancake
  • 1 tbsp. honey or agave syrup as topping
  • 1 tbsp. natural peanut butter as topping
  • Margarine (such as natural Earth Balance from Trader Joe’s) to use in the pan

Directions: 

  1. Mix together some of the dry ingredients: Whole wheat flour, baking powder, Truvia, salt, nutmeg & cinnamon
  2. Add: Eggs, buttermilk & canola oil.  Whisk.
  3. Fold in: Pumpkin puree & oatmeal
  4. Place the burner on medium heat; use a small pan
  5. Put just enough margarine (or oil) to cover the pan & keep the pancake from sticking
  6. Scoop the pancake batter into the pan.  Keep the pancake small so it can get cooked all the way through & it’s easier to flip
  7. Once the top of the pancake is bubbling, turn the heat down to low and flip the pancake
  8. Press the pancake down flatter with a spatula and cook for around 3 more minutes
  9. Serve & top with honey (or topping of your choosing)
