Countdown to Easter: 2 Days!

This is a great springtime salad to contribute to an Easter banquet



  • 1 large head of Napa cabbage
  • 1/2 head of cabbage
  • 1 package pre-chopped purple cabbage
  • 1 package pre-chopped carrots
  • 5 green onions, sliced
  • 1/2 c. toasted sliced almonds
  • Optional: 1 Tbsp. sesame seeds
  • Soy Ginger dressing (Trader Joe’s) or other low-fat/low-sugar asian style dressing

Toss salad to spread dressing out thinly & evenly

Enjoy this crunchy salad & share with friends & family


You could also add chicken for some protein & make it a Chinese Chicken Salad

Healthy House Salad


Sometimes I just crave a typical house salad with ranch dressing.  I found this great new all-natural ranch dressing made with yogurt.  It has a small fraction of the amount of fat than traditional ranch dressing and tastes even better as it is not thick and artificial.  Bolthouse Farms has a whole line of these yogurt dressings found in the chilled section.


  • Romaine, Green Leaf, or Butter Lettuce
  • Diced vine-ripened or roma tomato
  • Shaved carrots
  • Diced avocado (about 1/4 an avocado)
  • Diced cucumber
  • Bolthouse Farms Ranch dressing made with yogurt
  • Cracked pepper

Enjoy this refreshing, basic salad without the guilt of a fatty ranch dressing!

I have always loved the creativity of photography and experimenting with viewing the world through a different “lens.”  YES, I am that girl who makes everyone at the table wait to take a bite so I can take pictures of the dish.

I am taking a photography class this quarter in which we were required to purchase a DSLR camera.  I have yearned for a high quality camera like this since my photography classes in high school and am so happy with my purchase.

Quick tip: Adding brown rice to your salad makes it more hearty, nutty & flavorful!



  • Spring mix lettuce
  • Shredded carrots
  • Sprouts or micro greens
  • Short grain brown rice (the short grain has a nuttier flavor & texture than long grain)
  • Lower sodium soy sauce
  • All natural guacamole (use less than 1/4 c. in one salad) or diced avocado
  • Feta cheese (no more that 1/8 c.)
  • Tahini dressing or a vinegar-based dressing of your choosing


Spring Mix for the Best Salad recipe

Quick tip:  Mix together the lettuce, carrots & micro greens with the dressing first.

Then top with the brown rice with soy sauce, guacamole & feta cheese.  This way, you are not adding dressing where it’s not necessary and will ultimately use less dressing.

Enjoy your dark, leafy greens in the most delicious way!

Sweet Tart Spinach Salad

Healthy & fun veggie ideas for the new year


Dark leafy greens are the most nutritious form of veggies.  This salad turns the natural bitterness of spinach into a delightful sweet &tart mixture!


  • 2c. baby spinach or 1c. baby spinach mixed with 1c. spring mix salad
  • 1 large green apple
  • 1/4 c. walnuts
  • 1/4 c. dried cranberries
  • 2 Tbsp. Raspberry vinaigrette dressing or Panera’s poppyseed dressing (or another healthy dressing)

Look for natural or organic dressings without preservatives. Beware of dressings that say nonfat or sugar-free because these often have the most unnatural ingredients to make up for it.  Just choose a vinaigrette dressing and stick with 1-2 tablespoons.  Steer clear of ranch, thousand island, creamy caesar, etc.


  1. Dice the green apple & chop the walnuts
  2. Toss all the salad ingredients together


I’m always looking for new salad combinations to keep them interesting.  This one is my go-to sweet salad combo, enjoy!
