Healthy & fun veggie ideas for the new year
Today’s unique & tasty veggie dish is a healthy leafy green side dish with a sweet touch
Ingredients: Makes 1 serving
- 1 c. broccoli
- 1/8 c. pine nuts
- 1/8 c. dried cranberries
- Drizzle of balsamic glaze (I get mine from Trader Joe’s)
- Sea Salt & pepper to taste
Directions:
- Cook broccoli: Either steamed on the stove, steamed in the microwave (with about an inch of water in a bowl) or sauteed on the stove. Season with salt & pepper
- Toast the pine nuts in a pan on the stove until golden brown
- Combine the broccoli and pine nuts
- Top with dried cranberries & balsamic glaze
