Beet, Black bean & Avo Salad with Homemade Balsamic Vinaigrette


  • Romain lettuce
  • Black beans
  • Beets (canned  but not pickled)
  • Avocado (no more than 1/2 of an avo)
  • Balsamic vinaigrette

Directions for homemade Balsamic Vinaigrette

Ingredients: (1 serving)

  • 4 Tbsp. Balsamic vinegar
  • 1 Tbsp. Extra virgin olive oil (cold pressed)
  • 1/2 tsp. Oregano
  • 1/2 tsp. Thyme
  • Pepper to taste
  • Dash of sea salt
  • Option: a dash red pepper flakes for spiciness
  • Option: 1/2 tsp honey for sweetness
  1. In a mason jar or other sealable container add: 4 Tbsp. Balsamic vinegar, 1 Tbsp. Extra virgin olive oil (cold pressed), a dash of sea salt, pepper to taste
  2. Tip: Always use 4 parts vinegar and 1 part olive oil.  It will go farther and with less fat.
  3. Shake & pour over lettuce
  4. Then add the toppings on the salad so that the dressing isn’t going where it’s not needed
  5. Do not refrigerate dressing.  Just make one serving, or use the rest the next day
