Healthy & fun veggie ideas for the new year
Dark leafy greens are the most nutritious form of veggies. This salad turns the natural bitterness of spinach into a delightful sweet &tart mixture!
- 2c. baby spinach or 1c. baby spinach mixed with 1c. spring mix salad
- 1 large green apple
- 1/4 c. walnuts
- 1/4 c. dried cranberries
- 2 Tbsp. Raspberry vinaigrette dressing or Panera’s poppyseed dressing (or another healthy dressing)
Look for natural or organic dressings without preservatives. Beware of dressings that say nonfat or sugar-free because these often have the most unnatural ingredients to make up for it. Just choose a vinaigrette dressing and stick with 1-2 tablespoons. Steer clear of ranch, thousand island, creamy caesar, etc.
- Dice the green apple & chop the walnuts
- Toss all the salad ingredients together
