10 Days ‘Till Christmas!

For this joyous countdown ’till Christmas I will be focusing on unique & simple ways to make vegetables interesting.  This countdown will prepare you for the most nutritious & delicious new year ever!

Ingredients:

  • 1 yellow squash
  • 1 zucchini
  • 1/4 c. shredded parmesan cheese
  • 1/4 c. chopped pecans
  • Olive oil
  • Sea salt & pepper

Directions:

  1. Chop the squash & zucchini into spears, heat a pan on medium-high with olive oil IMG_3969
  2. Saute the squash & zucchini until browned.  Season with sea salt & pepper to taste IMG_3970
  3. Toast the chopped pecans in the pan, top with parmesan and cover
