10 Days ‘Till Christmas!
For this joyous countdown ’till Christmas I will be focusing on unique & simple ways to make vegetables interesting. This countdown will prepare you for the most nutritious & delicious new year ever!
- 1 yellow squash
- 1 zucchini
- 1/4 c. shredded parmesan cheese
- 1/4 c. chopped pecans
- Olive oil
- Sea salt & pepper
- Chop the squash & zucchini into spears, heat a pan on medium-high with olive oil
- Saute the squash & zucchini until browned. Season with sea salt & pepper to taste
- Toast the chopped pecans in the pan, top with parmesan and cover
Enjoy this toasted and healthy form of zucchini sticks!
