Healthy Sweet Potato Pecan Casserole

3 Days Till Thanksgiving!

Skip the marshmallows, brown sugar & butter, you don’t need those things to end up with a sweet and decadent sweet potato casserole!


  • 4 medium sweet potatoes (about 3 lbs.)
  • 1/4 c. honey or agave syrup
  • 1/8 c. pure maple syrup (if you don’t want to use maple syrup, just use 1/3 or honey/agave)
  • 1/2 medium sweet onion
  • 1 large egg
  • 1 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. ground nutmeg
  • 1 tsp. vanilla extract
  • 1/3 c. finely chopped pecans
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp. sea salt


  1. Preheat oven to 350 degrees
  2. Coat a large baking dish with olive oil
  3. Bring 8 cups of water to a boil in a large pot
  4. While water is boiling, peel the sweet potatoes and cube them into about 1 inch squares
  5. Place the sweet potatoes in the pot, boil for about 20 min. (or until tender) IMG_3645
  6. Drain and transfer sweet potatoes into a large bowl
  7. Cut the onion into thin slices and saute until browned, add with sweet potatoes IMG_4246
  8. Also add: Egg, cinnamon, nutmeg, vanilla extract & sea salt to the sweet potatoes
  9. Place the sweet potato mixture into the baking dish and top with chopped pecans IMG_3655
  10. Bake until the edges begin browning (about 35 min)
  11. Move to the top rack and broil for about 3 min, until the pecans are toasted
