Healthy Thanksgiving Green Bean Casserole

6 Days Till Thanksgiving!

The green bean casserole is my favorite holiday dish, it’s the one that Thanksgiving dinner would not be the same without.  This simple & healthy version of the casserole still has that great crunchy, toasted onion topping

+ Green Beans

  • 2 lbs. green beans (fresh or frozen)
  • 1 medium sweet onion
  • 8 oz. mushrooms (portobello or crimini)
  • 1 & 1/4 c. panko bread crumbs
  • Shredded Parmesan cheese
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 tsp. paprika
  • 1 tsp. garlic powder
  • Salt & Pepper to taste

  1. Place the oven on broil.  If the green beans are frozen, thaw or defrost
  2. Slice the mushrooms & cut in half and chop 1/3 of the onion IMG_4235 IMG_4237
