Cajun Chicken Jambalaya

This healthy Cajun Chicken Jambalaya is a hearty dish that’s bursting with flavor! The recipe makes about 4 (1 & 1/2c.) servings so you can have leftovers for the whole week.  Trust me, you won’t get sick of it…



Don’t worry about having all the seasonings. All you really need is the Cajun seasoning; if you don’t have that, all the others together will make up the cajun seasoning. (Cayenne for spice)

  • 2 large chicken breasts (about 1 & 1/2 lbs)
  • 1/2 c. brown rice (my favorite is short grain)
  • 1 & 1/2 Tbsp. low-sodium chicken bouillon
  • 1 green bell pepper
  • 2 cloves of garlic
  • 3 bunches green onion
  • 1 can of diced tomatoes
  • 1/4 c. worcestershire sauce
  • 2 Tbsp. cajun seasoning with a dash of paprika/oregano/garlic powder
  • If you don’t have cajun seasoning use: 1 Tbsp. paprika, 1 tsp. oregano & 1 tsp. garlic powder
  • Cayenne pepper to taste (depending on how spicy)
  • Sea salt & pepper


  1. In a medium pot, bring 1 & 1/2 c. water to a rolling boil (or use rice cooker) & Add 1/2 c. brown rice
  2. Turn down to medium-low, cover & cook for about 30 min. stirring occasionallyIMG_3882
  3. Cut chicken into bite-sized chunks, season with salt & pepper, then place in large pan on medium heat with about 1 Tbsp. olive oil
  4. While chicken is cooking, cut green pepper & green onion. Mince the garlicIMG_3878
  5. Once chicken is browned on one side, add chopped veggies  IMG_3880IMG_3883
  6. While veggies are browning, bring 1 & 1/2 cups of water to a boil in a different pot
  7. Once water is boiling add 1 & 1/2 Tbsp. low-sodium chicken bouillon & stir until melted in. Turn heat off
  8. Add brown rice, seasonings & worcestershire sauce with chicken & veggiesIMG_3884

  10. Cover & let sit for about 20 min, stirring every once and a while as the broth soaks inIMG_3886
  11. Once chicken broth is mostly soaked in, with some broth remaining, turn heat off IMG_3894

This dish may seem intimidating because of all the steps, but it is really pretty easy to throw together.  This would be great with shrimp in addition to or instead of the chicken, maybe even add some chicken sausage.  You can play around with the seasonings & meats to see how you like it best.
