Savory Stuffed Portobello Mushrooms

TGIF! Everyone deserves a treat at the end of the week!  This was my first attempt at stuffing portobellos and one of my most gourmet creations. I just used the cheese & veggies that were in my fridge and it turned out to be such a tasty vegetarian & gourmet treat!

Ingredients: 4 Servings, 2 types

Creamy Goat cheese and Herb Portobello:

  • 2 medium portobello mushrooms
  • 4 tbsp. finely diced yellow onion
  • 1 1/2 tbsp. herb goat cheese
  • 3 sprigs of fresh thyme (to taste)
  • 1 tbsp. olive tapenade (optional): My fav. is Costco’s Mediterranean Olive Tapenade

Portobello Pizza:

  • 2 medium portobello mushrooms
  • 4 tbsp. finely diced red bell pepper
  • 2 oz. fresh mozzarella (about 1/4 of the log): I like this marinated one from Trader Joe’s but any fresh mozzarella works
  • 1 small clove of garlic
  • Red pepper flakes (optional: for spice)
  • (Next time I will try adding a little marinara sauce with the red bell pepper)

Directions: 

  1. Preheat oven to 350 degrees
  2. Finely dice the yellow onion.  Separately, dice the red pepper
  3. Press the garlic with the diced red pepper
  4. Hollow out the portobello mushrooms by removing the stem and centerIMG_3447
  5. Saute the yellow onion & in a separate small pan, saute the red pepper & garlic until browned
  6. Coat the outside of the mushrooms with olive oil.  Place on a baking sheet
  7. Stuff two of the mushrooms with: onions, topped with herb goat cheese, and thyme leaves
  8. Stuff the other two mushrooms with: red pepper & garlic, topped with mozzarella, and red pepper flakes (if desired)

  10. Bake for 10 min. & Broil for 5 min.
  11. Top off the goat cheese mushroom with olive tapenade

These would be great a appetizer for entertaining.  Your guests will never guess how easy they were to make!
